Funfetti Fried Candy Corn
Serves: 5-6
  • 2 cups Funfetti pancake mix
  • 1 large egg
  • ½ cup buttermilk
  • ½ cup Kellogg's Frosted Flakes cereal, crushed
  • ¾ cup candy corn, chopped
  • Canola or vegetable oil for frying
  • Powdered sugar, to garnish
  1. In a large bowl, add the pancake mix, egg, and buttermilk. Stir well.
  2. Add the chopped candy corn and crush cereal to the mix and stir well to incorporate.
  3. Add 1½ inches of oil to a frying pan or Dutch oven and heat over MEDIUM heat for 5 minutes (or use a candy thermometer to reach 350°).
  4. Drop the candy corn dough by Tablespoons into the hot oil. Fry on both sides for 1 minute each.
  5. Place on a paper towel for 1-2 minutes to soak up any excess oil and sprinkle with powdered sugar. Transfer to a wire rack to completely cool. (Do not wait any longer than 2 minutes to transfer or the fried candy corn dough will begin to stick to the paper towel).
